Pumpkin Gingersnap Parfaits
Ingredients for 4 servings
1 15-ounce can Pure Pumpkin
4 ounces Cream Cheese, softened
2 Tbsp Brown Sugar
1 tsp Cinnamon
1/8 tsp Ginger
1/8 tsp Nutmeg
1 cup Heavy Cream
2 Tbsp Sugar
12 Gingersnap Cookies
Directions
Crush 8 of the gingersnap cookies.
Beat together the pumpkin, cream cheese, brown sugar, and spices until evenly combined.
In a separate bowl, beat together the heavy cream and sugar until thickened.
To assemble the parfaits in layers
Divide half of the pumpkin mixture into four cups, and sprinkle half of the gingersnap crumbs over the pumpkin.
Spoon half of the whipped cream over the crumbs in the four cups.
Repeat step 1 using the remaining pumpkin and gingersnap crumbs.
Top with the remaining whipped cream.
Garnish each parfait with a gingersnap cookie.

Charles Dickens’ letter opener was made from the paw of his pet cat
“The handle is made from the paw of Dickens’s pet cat Bob, and the  blade is engraved ‘C.D. In Memory of Bob 1862,’ the year of the cat’s  death.”
You can see the letter opener in New York City, where it is currently on display in a new exhibition (up through December 31) celebrating the centennial of the New York Public Library’s august building on Fifth Avenue.
